Yellow Rice (Nasi Kuning)

Yesterday, I have been craving for nasi kuning (yellow rice) and thought I could do it with whatever ingredients that I have in my pantry and fridge.
Here is the outcome...


Ingredients

(1) tablespoon of kokita Nasi Kuning seasoning

(3) cups of rice washed

(1) teaspoon of minced garlic

(1/2) teaspoon of salt (optional)

Marinate chicken parts in dashes of


tumeric,
ground pepper,
minced garlic
and add a tablespoon of flour and marinate for 15 minutes.


Directions;

(1) Wash 3 cups of rice
(2) Mixed with kokita Nasi Kuning seasoning paste
(3) Add minced garlic
(4) Add 300 ml of water in rice cooker (or more if needed)
(5) Steam rice until cooked


Optional:

You can also served yellow rice with cucumber, sliced omelette, or instead of using chicken parts you can also use stir fry sambal shrimp, sambal squid or beef or chicken rendang. Yummmie!

Eating out at Hacienda Mexican Restaurant

A couple of months ago, I went out with 3 of my best buddies or rather ex-colleagues to Hacienda Mexican Restaurant at 1st Ave. In reality, I've never been to any of those popular Mexican Restaurants around town because my dear husband just didn't care for the food, (he have never been to one, and it's like him assuming that Mexican Restaurant is all about spices and food being spicy! haha).

To be on the safe side, before going out with my friends, I went online to check their menu, and to my amazement, there's plenty of choice for everyone — from appetizers, soups and salads to burritos, fajitas, chimichangas, quesadillas and so much more! Apart from that diners have all the free chips and salsa you can possibly eat.

What I ate was a plateful of crisp-fried potato skins which are topped with cheese, diced tomatoes, jalapeƱo peppers and sour cream. It was super de-li-cious!

World's tallest water ride

I've just read the paper today that Holiday World Splashin' Safari is going to add the World's tallest 'Pilgrims Plunge' water ride next spring. On top of this new ride the Koch family (owner of Holiday World) also announced the HoliWatch program, a wristband-style radio frequency identification service that will be offered free to park guests in 2009. The water-proof devices will serve as locators for families or groups who become separated during their visit.

I have been to Holiday World twice this year, and I've enjoyed the water park because it's cooling and more relaxing instead of those roller coasters ride like the legend, the raven or the voyage. Those kind of thrills will definitely kill me!! I remember an incident where we went to Six Flag, somewhere in Denver where my dear husband told me it's not that bad, I took his word for it, and I ended up being sick and that was the one and final ride that I took and never again! This Holiday World Splashin' Safari is really great for young and old alike. There are just so many things to do and like I said, I would prefer the water park, and they have kima bay, wave pool, Bahari river, Bakuli and some other rides for little ones. Other shows are Holidazzles, for songs, laughter and dance. The Hoosier Celebration Theater rocks all season on a retro trip down memory lane with favorites from the '60s, '70s and '80s.

Frog Follies

It was the 34th annual Frog Follies weekend in Evansville, and hundreds of street rods began pouring into the Vanderburgh County 4H fairground. These hot rod shows are an annual event at the Vanderburgh 4H fairground, but as what I can see yesterday, it was the largest ever! I was shocked to see a huge crowd and there seems to be more new participants this time. I heard that these Frog Follies go to hot rod shows all over America to show their fancy rides and I've also seen a few of those fancy cars are for sale, since some of those pioneers are retiring. Bob Bell, a spokesman for the Evansville Iron Street Rod Club which has been staging Frog Follies since the mid-1970s, said organizers were worried at first that high gas prices might cut into attendance. Those fears changed when they noticed that about 300 of some 2,500 preregistered car owners indicated they had never been to the show before. At last count Friday evening, about 3,500 cars were signed up for the show!
Apart from showing off their fancy cars, there were also flea market stalls with people selling T-shirts, trinkets, handbags, shoes, quilts, decorative items of FROGS in all kinds of sizes and shapes. We didn't managed to see all the fancy cars, because my son was already moaning and groaning about the heat and his tired feet. The weather was really really humid, probably the hottest day of the year, and I was not really bothered by the heat because of my excitement in seeing all those pretty cars. They come in so many colors, (some are Pink, Shocking Green, Purple, Orange, or a mixture of rainbow color) and some are extremely old and needed to be towed to be in the car show. Is this supposed to be funny or offensive?

Here is the much talked about controversial photo of the Spanish basketball team who defended that the photo is not meant to be offensive. What do you think?







Here is another photo recently discovered on the website of the Spanish Tennis Federation shows the Nation's Federation Cup team making any eye-slant gesture. The shot was snapped in February, prior to Spain's Federation Cup match with China.



Some people thought it's supposed to be funny and never offensive in any way. Some felt it was something appropriate, and that it would be interpreted as an affectionate gesture. Some others thought it's racism. It’s not the first time Spanish sports has encountered questions over racist attitudes, and the photo comes at a time when Madrid is vying to host the Olympics.

She had a group of black guys at her school call her a slave girl among other things. And I am not talking about a high school either, these are college men. I think anyone who thinks the Chinese or other Asians wouldn't be upset by this is a fool. Maybe things like this lead many girls over in Asia get their eyes done to look like other races. Shame. I am just glad the USA isn't involved in anyway.

Dr. Oz's famous green drink

Dr. Oz's famous green drink recipe. Drink to a healthy, daily, vitamin-rich veggie drink for great health.

Instructions

Difficulty: Easy
How To Make Dr. Oz's Green Drink
Things You'll Need

2 apples
2 big handfuls of spinach
1/2 cup chopped parsley
1 celery stick, chopped
1 thumbnail length of ginger root, peeled
1 lemon, juice only (use peel slice for zest)
1 medium cucumber
Blender

Step 1
Core the two apples.

Step 2
Place all ingredients in a blender with 4 oz. of water or a handful of ice cubes.

Step 3
Puree quickly for one minute. Makes two glasses of Dr. Oz’s green drink.

Tips & Warnings
The green drink has a strong taste, and if you’ve never had it before, you may want to make it with more fruit, like apples and bananas, to add sweetness.

Would you like to be told that you look 60 but your real age is 44? Of course not, but that is the reality of it all if we don't exercise, doesn't deal with stress well, don't watch what we eat, do drugs or smoke.

In reality, the easiest way to start is to do moderate exercise, eating plenty of foods rich in antioxidants. Consuming more antioxidants helps provide the body with tools to neutralize harmful free radicals. It was estimated that there are more than 4,000 compounds in foods that act as antioxidants. Anti-aging foods are rich in antioxidants. OMG! A sex offender in the neighborhood!

It was my usual daily trip to the mailbox outside our house, to see if there's any mail for us, and automatically, I would also check the newspaper box which sits beside the mail box. There was a piece of paper there which I thought must be some junk mail. I became curious as soon as I saw a picture of a guy and the heading in bold showing 'INDIANA SEX & VIOLENT OFFENDER REGISTRY'. I walked back to the house and scan through the details of that piece of paper. Oh my God, I mumbled to myself, this guy is staying just 3 doors away from us! How could that be, I thought! I have never seen him before, I've always been out in the yard, weeding, watering and gardening, and how come I've never seen this guy before? It's a small sub-division and mostly friendly family oriented residents with young childrens and a few retirees.

Upon looking through this flyer, it shows that this guy entered guilty pleas to rape and 2 counts of robbery stemming from 2 unrelated cases. He was out on bond for robbing a former girlfriend, when he raped a 24 year old woman at knife point. In return for his guilty pleas, prosecutors have agreed to dismiss habitual offender and battery charges in the cases. Prosecutors have also agreed not to file child molesting charges, currently under investigation against him. He also pleaded guilty to a purse snatching where he punched a woman.

The scary news is that, this guy has been released from a correctional facility on 11/3/07 and he is living in my neighborhood and is just 3 doors away from my house.......OMG!! I no longer have a life outside my front door nor in my backyard!! What am I going to do now??

Now I am more concern about family safety, being observant, vigilant and aware of my surroundings. I am not sure who put that notification, but who ever did that is a concern citizen, and makes me more aware of what is going on in the area.

A busy Saturday

We were having such a busy day today. Upon waking up this morning, we've decided to go into town to have a hair cut for Ramzi and his daddy. It got to be done today because Ramzi wants to look 'sleek' on his 1st day of school. We went, and had that done. Right after, we went to Deaconess Gateway Women hospital to visit a cousin (my husband's side) whose wife gave birth to their 1st baby, a cute little bundle of joy, a 6+ lbs baby boy, Aiden Joseph and we all got to hold him, except Ramzi who was ready to hold the new baby, but I was just too scared to let him. It was a great visit and I will put some pictures here.



After an hour of visiting, our stomachs were growling in hunger, so we told them our goodbyes and a final congratulations to the happy new parents, we left and we went to a new Thai restaurant by the hair-cut place that we went to earlier. Ramzi and daddy had shrimp fried rice, while I had an awesomely delicious bowl of deep fried tofu with peanut sauce and tom yum. Oh my God, it was the best that I have ever tasted. It feels like eating them back home in the hot steamy kitchen of my mom's house...or... it could be because I was extremely hungry?

We managed to talk to the owner, a small friendly guy, and he told us that his restaurant started their business just last month and he is proud to announced that his is the first restaurant serving authentic thai cuisine. The deco. and the atmosphere in the restaurant reflects their Thai culture. I will definitely be back.
Right after, we went across to Henderson, Ky, to do some errands, and drove back to Evansville, In. After a couple hours of watching movies etc., I went out to mow the back and front yard. I told myself I need to do it just for the exercise. At least I got to sweat a little bit, and get back inside and it was already time for me to cook supper.

Long live my Apple tree

A couple of years ago, I was at Lowes and got me an Apricot, Cherry and Apple trees and with the help of my father in-law we planted them in the back yard. My father in-law noticed that the soil in the back yard is hardy with small rocks which makes it difficult for him to dig and he was also skeptical about 'if' my fruit trees are able to handle that condition. Well, we planted it and for about a year, they were growing fine, but I noticed that my Apricot and Cherry trees were bearing small fruits but it didn't go that far, and the fruits just disappear! After a couple of months or so, my Cherry tree did not make it at all, it died gracefully. My Apricot tree was left like a stump with no leaves on it! I thought my Apple tree would also have the same fate, but all along there were a few leaves and some bitty fruits on it, but this year, the leaves were all green and the fruits were bearing like crazy, to my amazement! The tree is not so tall, and with that so many fruits on it, it sort of droop to the ground, pulling the top or center to the side. I was thinking to myself, it must be the so much rain that we are having this summer compared to the last one.

Tv commercials and my son

My son's favorite tv channels are Nick Jr., Cartoon Network and Jetix. His favorite shows are Drake and Josh, Spongebob, Icarly, Power Rangers and Spiderman. I mentioned Dora and Thomas, he shook his head and gave me that 'nope' shake of his head, said it's for kids!! Isn't he a kid himself?? He think he is a 'bigger' kid, so Dora and Thomas are for younger kids. His most favorite channel is Nick Jr., and every 10 or 15 minutes in between shows, it will go to commercials and I would think that he would move away from these commecials, but I was so wrong! It affects him differently compared to us average adult. On every commercials that comes on, he could not resist saying something in response to those commercials, from physical actions to passive uses of those ad's language.He can verbally imitate ads, act them, especially those with music, images and also those non verbal ads.! It's really amazing how he reacted and his responses, how it affects him daily and the advertisers I bet are drooling!

There is no limit to the commercials that he watches on Nick Jr. It could be from Moon sand to Colgate advertisement. For example, during our weekly grocery trip to Wal-Mart we would go through each isle and out of the blue, he would say he wants cocoa puffs cereal, lucky charms, trix, cherrios etc., and I would tell him, we have never tried it before and he would say, I have seen it on TV, and I want to try it today. We have tried cereals like fruit loops, honey combs, frosted flakes and fruity pebbles which he loves, and to add more to the list of what he sees on TV is just ridiculous! We always end up trying some of the stuff that he wanted, but it will end up in the trash after a few months of him being no longer interested in it.

His never ending list starts from his birthday list, being good list, holiday list, or weekly to monthly list! Anytime there's a new commercials for Burger King, Mc Donald's, Arby's, Dairy Queen etc. he would say, 'mommy, maybe we should eat at Mc Donald's today, and I would tell him it's unhealthy, and he would bug me all day about going to such places, not for the food but for the toys that such places have! I am just shocked at his needs for toys and how commercials affect him so bad! At one point when this Roll'n grow commercial for miracle garden in a box came on, he even suggested that I should purchase them because it will be easier for me instead of the regular ways that I am doing now. One other classic commercial that affect him is the Aqua globes, a watering solution for house plants. He would start with, mommy, look... You can buy that and you don't have to water plants every day, just push it in the soil and it will water by itself. Honest to God, I am never bothered about those stuff, but it is just amazing how those commercials are influencing my son! Other commercials that he is attracted to are those like juicy juice, M&M's, starburst and so many others that I couldn't think of right off my head.


He grew up watching TV commercials and I'm sure I was equally duped but I couldn't believe the impact those commercials had on him. It was like they were handing out candies through the TV. I realize that I can't shield my child from everything, but I was absolutely disgusted by how easy it was for 'them' to get him. You've got to hand it to those ad agencies, they know what they are doing, but for my part, I'm immediately writing a check to Nick Jr or Cartoon Network for that matter, they've got my son HOOKED!

Ready for kindergarten?

Tomorrow with be 'THE' day for us to see my son's teacher at his kindergarten Open House. We were already given all kinds of papers to fill up and a list of stuff to be brought to that Open House and to finalize some other nitty gritty things like lunch box, books, pencils etc., so he will be ready for first day at school on August 11

As for my son, he have been to Pre K, and separation problem won't be an issue, but after a long vacation, he may have this slight feeling of homesickness or missing his mommy for a bit, but that will go away after a few hours or so.

Midnight died!

It was probably 7+ years ago when Midnight first came into our household. He was a motherless fragile little kitten. I could still recall that day, it was raining heavily with lightning and thunderstorm, and my friend had him in a cat carrier so he would not run wild in the car. Now, as you can see, Midnight is a huge, almost a 40 pounder cat.

Sadly, probably around May or early June 08 we have to give him away to a friend who lives in a farm. We thought he would have a better life there compared to be cooped up in the garage all day, though sometimes he would come into the house during the cold winter or hot summer days. Our friend was happy to have him because he will have a bigger place to roam around, and probably catch some mice in their barn. The main reason why we had to give him away was my son's allergy and also mine. We have been putting the idea off many many times, but because of my son's health issue, we have to do something about it. Since this guy works with my husband, we were able to get updated information on how Midnight was doing and it was a relieve for us knowing that Midnight is in good hand.
Unfortunately, when we got back from vacation, and my husband goes back to work on July 19, we heard Midnight had died. I was extremely upset and sad all at once, though we decided not to tell our son of Midnight's sudden death. I love that cat and didn't want him to die, but it's just beyond our control.
My husband was told that Midnight had been to the Vet a couple of weeks ago because of an open wound to his head, probably because of a fight with another cat or a dog. He was resting and doing ok, but after a week, he was just not eating, and lost a lot of weight and he just suddenly died.
All day, I was thinking, if we didn't give him away he could have had a longer life! In reality, we didn't know that was going to happen, and we pray that he will have a better life in CAT HEAVEN.

storming the job market

For the past couple of weeks I have been spending a lot of times on the internet, browsing the classifieds in the newspaper, looking at employment agencies, monster job search and directly into companies website. I have seen some that fits my qualifications and experiences but the hours are just not in accordance to the schedule that I wanted. It brings me back to if I should pursue my career or just be a stay-at-home mom. I was a stay-at-home parent for the first three years of my 5 year-old's life, and I think that's partly why we have such a great relationship. This time around I'm torn between returning to work and worrying about what I am going to do if there's going to be school closure because of flood, snow or my son gets sick or some other unexpected circumstances. My son's school starts around 7.45 am and ends at 2.15 pm. I would love for him to take the school bus, but I am still skeptical about his safety after seeing so many happenings showing students beating each other in the bus, a bus wreck etc. I am just paranoid, and I feel that at this time it is best that I drive him to and from school which is just around 15-20 minutes from our house. I love to get a job but would hate to inconvenience the company that I work with with all this unforeseen issues that I am almost sure will crop up some day.

Anyway, with that thoughts stressing my brain, I received a number of responses ever since I posted my resume on the net and also to those that I have applied directly. I have worked all my adult life, right after college, and by not having a job and not earning my own money is just unthinkable. Recalling my early teen years without a dad (he died when I was only 11) and having very little money for school makes me wants to strive harder for the future.

I will definitely call or reply to those potential employers and will tell them exactly what my requirements are, and if it's not what they are seeking, I will have to decline their offer and go to the next one.

My little transformers

At first it was just teletubbies, arthur, sagwa, barney and dragon tales stage, next he was crazy about thomas for quite awhile. He got everything from thomas books to thomas shirts and back pack. He was not hooked only on thomas the tank engine or Lionel stuff, but also from CSX to all those freights and passenger trains like Amtrak, Santa Fe, Burlington, Oriental Express etc. He even knows what types runs on what scales! We even have to go to this ABC train shop around town where elderly guys are into such collectibles and does it as their hobbies. One particular guy even have a huge garage in his backyard where he got all kinds of model trains that runs live and we went to one of those, and it is pretty amazing how much efforts they put into making it looks real. My son was ecstatic! After almost a year of being crazy about trains, and we having to spend so much $$, he slowly diverted his attention to Power Rangers and now, Transformers.

It all began the day we were in Wal Mart store where he usually browse around at the toys area. Power Ranger was always side by side Transformers, Spiderman and Batman. He was saying that this transformers does this and that and can be transformed into a robot or a car. I said to myself, oh .. oh ..! I told him our house is so full of toys and we are not going to buy anymore toys. He would say, 'but mommy.............., I would say, No... again and again. He said he no longer is interested in Thomas because Thomas were for babies and he is a big guy now and he wants 'big guys' toys! He was even wanting me to put his Thomas stuff up for yard sale and wanting me to keep his other expensive train stuff as collectors items. To show that he is 'over' Thomas, he would not even want to wear his so many Thomas shirts, shoes or back pack anymore! To cut the story short, he is 'big time' into Transformers and are able to differentiate the difference between the bad guys and the good guys. The bad guys are 'Megatron' and they are the Decepticons, the good guys are 'Optimus Prime' and they are the Autobots. When the new Transformers movie came out, we purchased a dvd at his insistent, and he enjoys watching it so much and thought that is the best ever, and watches it over and over again, where he can even talks like the characters in the movie. I've also watched the movie a couple of times with my son, and I got hooked too! It's a pretty great movie and action packed. Since it is PG13, I have to explained to my son that the movie is not for real, it's sc-fi and also explained to him the action violence involved. My son thinks Sam Witwicky (Shia LaBeouf) is so great and when Sam Camaro converts to a new chevy Camaro, he thinks that is just so cool.

Seafood - My style shrimp scampi

I have not seen anyone as crazy as my dear husband about eating shrimp or crab legs. He eats shrimp about every day. I used to be seafood crazy myself, but after cooking for him day to day, I begin to lose that appetite for seafood, but it did not bother him at all if I feed him shrimp every day! His favorite style is shrimp scampi, and the real truth is, I could cook it without thinking and with my eyes fully closed. That's what is happening if you do it every day.

Here's my very own recipe and fully accepted by my dear husband. He says it is the best ever!



MY STYLE SHRIMP SCAMPI

3 tablespoon smart balance butter
1/4 c. dry parsley flakes
1 tbsp. minced garlic
1 lbs. shrimp
Lemon juice
Salt to taste

Melt smart balance butter in skillet.
Add garlic and saute until slightly golden brown
Add parsley flakes.
Cook on medium heat for about 3 minutes.
Add shrimp.
Add salt
Pour a tablespoon of lemon juice over shrimp and saute
Cover and cook until shrimp are done.
Cook until liquid makes gravy (about 10 minutes).
Serve with baked potatoes or steak fries and corn on a cob.
