I have not seen anyone as crazy as my dear husband about eating shrimp or crab legs. He eats shrimp about every day. I used to be seafood crazy myself, but after cooking for him day to day, I begin to lose that appetite for seafood, but it did not bother him at all if I feed him shrimp every day! His favorite style is shrimp scampi, and the real truth is, I could cook it without thinking and with my eyes fully closed. That's what is happening if you do it every day.
Here's my very own recipe and fully accepted by my dear husband. He says it is the best ever!
MY STYLE SHRIMP SCAMPI
3 tablespoon smart balance butter
1/4 c. dry parsley flakes
1 tbsp. minced garlic
1 lbs. shrimp
Lemon juice
Salt to taste
Melt smart balance butter in skillet.
Add garlic and saute until slightly golden brown
Add parsley flakes.
Cook on medium heat for about 3 minutes.
Add shrimp.
Add salt
Pour a tablespoon of lemon juice over shrimp and saute
Cover and cook until shrimp are done.
Cook until liquid makes gravy (about 10 minutes).
Serve with baked potatoes or steak fries and corn on a cob.
